Bhindi (Okra) Fry
December 03, 2016- 2 cups okra
- 1 medium onion
- 2 tbsp vegetable oil
- ½ tsp turmeric powder
- ½ tsp cayenne or hot red pepper powder
- salt to taste

Wash and completely dry the okra. Chop into ¼-inch rounds and let stand for 10 minutes. Slice the onion. Heat the oil and add the cumin seeds until they splatter, then add the onions and fry until transparent - just a couple of minutes. Then add okra and stir. Cover and cook for 5 minutes on low heat, then add turmeric, cayenne, and salt to taste. Cover and cook for another 5 minutes, stirring occasionally. Serve hot and enjoy!
